It’s hard to believe this actually happened in 2017, but it did–according to Time.com and CNBC.com–and that’s a huge increase from the $17,000 spent on avocado toast in 2014. Suffice to say we are all obsessed with avocado toast. No wonder it appears on the menus of so many restaurants and cafes. And the crazy thing is these restaurants charge anywhere from about $7 to $18 per order. You may think it sounds ridiculous to spend that much on avocado toast as do I, but guess what? It seems we are buying it anyways!! So how about this for an idea: let’s add some money to our wallets and make our own avocado toast!
Here are 5 delicious versions:
*Always start with a hearty whole grain bread that contains at least 3 grams of fiber per slice and toast it. Sometimes I use an Ezekiel English muffin for my avocado toast.
AVOCADO TOAST #1 aka Lexi’s Version:
Dijon mustard and 1/2 avocado smeared on the toast + 1 fried egg + 1 slice of yummy cheese + a sprinkling of Frank’s Hot Sauce
AVOCADO TOAST #2 aka Phil’s Version:
1/2 avocado smeared on the toast + a squeeze of lemon juice + chia seeds + 1 whole raw kale leaf + pomegranate seeds
AVOCADO TOAST #3 aka Tara’s Version:
1/2 avocado smeared on the toast + a little Maldon sea salt flakes + pepper + sliced tomato + arugula + a drizzle of extra virgin olive oil
AVOCADO TOAST #4 aka Leftovers for Lunch:
1/2 avocado smeared on the toast + leftover roasted vegetables + a sprinkling of feta cheese + a drizzle of balsamic glaze
AVOCADO TOAST #5 aka Plain and Simple:
1/2 avocado smeared on the toast + salt + pepper + a drizzle of balsamic glaze
