Versatile Green Sauce

This vibrant, fresh-tasting green sauce will enhance any chicken, fish, tofu or steak dinner.

Ingredients

  • 1 bunch fresh cilantro bottom stems removed
  • 2 cloves fresh garlic chopped
  • juice of 1 lemon
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper
  • 1/4 cup extra virgin olive oil

Directions

  1. Place all ingredients in a food processor or heavy-duty blender like a Vitamix.  Puree until a beautiful green sauce forms!

  2. Taste and add more salt and pepper if needed.  Add more oil or a little water if sauce is too thick to get the desired consistency.

  3. Drizzle over grilled chicken, fish, shrimp, tofu or steak.
