Versatile Green Sauce
This vibrant, fresh-tasting green sauce will enhance any chicken, fish, tofu or steak dinner.
- 1 bunch fresh cilantro bottom stems removed
- 2 cloves fresh garlic chopped
- juice of 1 lemon
- 1 tablespoon red wine vinegar
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground pepper
- 1/4 cup extra virgin olive oil
Place all ingredients in a food processor or heavy-duty blender like a Vitamix. Puree until a beautiful green sauce forms!
Taste and add more salt and pepper if needed. Add more oil or a little water if sauce is too thick to get the desired consistency.
Drizzle over grilled chicken, fish, shrimp, tofu or steak.
