Air Fryer Chicken Bites: A good reason to buy an air fryer!

Remember when the kids were little and all those little nuggets wanted to eat were chicken nuggets?!  You always had a box in the freezer.  Sometimes you’d even take a bite of one from your kid’s plate.  And when you looked inside the nugget after you bit it, you realized how gross they were.  They looked like processed chicken mush—not like an actual piece of a chicken breast.  Nevertheless, you ate them and you fed them to your children.

Well recently I bought an air fryer and one of the recipes I found for it was for REAL chicken nuggets.  I mean little cut up pieces of actual chicken breast dipped in seasoning and breadcrumbs and browned in an air fryer.  Add a little side of homemade honey mustard dipping sauce and we are talking delish.  And NOT just for kids.  My kids aren’t even home anymore and my husband and I devoured these.

So give this easy, yummy recipe a try for yourself and for your little nuggets.  You’ll feel like a much better parent.

Air Fryer Chicken Bites

A homemade version of chicken nuggets that's not just for kids!

Ingredients

  • 2 large organic boneless chicken breasts cut into chicken nugget size
  • salt and pepper to taste
  • 1 tbsp extra virgin olive oil
  • 6 tbsp whole wheat seasoned bread crumbs
  • 2 tbsp panko bread crumbs
  • 2 tbsp grated parmesan cheese
  • cooking spray

Honey Mustard Dipping Sauce

  • 3 tbsp dijon mustard
  • 2 tbsp mayonnaise
  • 1 tbsp honey

Directions

  1. Preheat air fryer at 400 degrees for 8 minutes.

  2. While air fryer is preheating, cut the chicken into small bite size pieces.

  3. Place olive oil in one shallow bowl.

  4. Mix together both breadcrumbs and the grated parmesan cheese in another shallow bowl.

  5. Place cut up raw chicken in olive oil bowl. Season with salt and pepper and toss the chicken so it is coated with the seasoning and olive oil.

  6. Dip a few chicken pieces at a time in the breadcrumb mixture so the pieces are covered with breadcrumbs. Set the pieces aside on a plate or cookie sheet.

  7. After the air fryer is preheated, place half the chicken pieces in the air fryer tray. Spray the pieces with a little cooking spray. Cook the batch at 400 degrees for 6 minutes.

  8. Flip the chicken pieces over and cook again at 400 degrees for 4 minutes.

  9. Remove the cooked chicken from the air fryer and place on the serving dish. Cover with tinfoil.

  10. Repeat the same cooking method with the second batch of chicken.

  11. Serve with Honey Mustard Dipping Sauce.

Honey Mustard Dipping Sauce

  1. Whisk all ingredients together in a bowl and serve with the chicken.
