Super-Quick Healthy Pancake Breakfast

No, that is NOT whipped cream on the pancake!  If you know me, you know that I would never start my day with whipped cream or anything unhealthy because it starts you off on the wrong foot.  What that is is Trader Joe’s Whole Milk Coconut Cream yogurt atop a HEALTHY and SATISFYING pancake!

If you are in a rut with breakfast and you love pancakes but you know that your run-of-the-mill white flour pancake doused in syrup is not the healthiest choice for breakfast, then you are in for a treat with these healthy pancakes that are quick enough to make on a weekday and delicious enough for any day of the week!

Top them with fresh fruit and a dollop of creamy yogurt instead of syrup!

Quick and Healthy Pancakes

These healthy pancakes taste great and will fill you up!

Ingredients

  • 1/2 cup thick rolled oats do not use quick cooking oats
  • 1 egg
  • 1 egg white
  • 1 tablespoon milk or non-dairy milk
  • 1 tablespoon ground flaxseed
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla

Directions

  1. Mix all ingredients together in a bowl.

  2. Preheat a pan.  When heated, spray with non-stick cooking spray.

  3. Place two large spoonfuls of pancake batter in the pan to create two pancakes.

  4. Cook for about 4 minutes until set and then flip.  Cook another 4 minutes on the other side.

  5. Top with fresh fruit and a dollop of yogurt.
