When I was a kid, my friend and I would go to lunch at a local deli and she would always order cabbage soup. We were like 16-years old and she was ordering cabbage soup–like a 90-year old. I never understood what she liked about it.
But now I am 52-years old and my taste buds have totally changed. I like sugared fruit-shaped jelly candies and hot fruit compote, which I think are very older person things to like, and I love cooked cabbage.
Cabbage is fantastic for digestive health, is an excellent source of powerful antioxidants that help protect against harmful free radicals and it contains a high amount of Vitamin C and Vitamin K.
This dish is real comfort food. It’s not hard to make and it contains practically a whole head of white cabbage. It’s sort of like a non-sweet version of stuffed cabbage but loose and free in a bowl.

Cabbage and Beef Bowls
Total comfort food!
Ingredients
- 1 t. extra virgin olive oil
- 1 lb. 90% lean grass-fed ground beef, ground turkey or ground chicken
- 1 1/4 t. kosher salt
- 1 cup onion chopped
- 2 carrots diced
- 2 cloves garlic minced
- 2 T. oregano
- 1 t. black pepper
- 8 oz. low-sodium tomato sauce
- 1/2 t. paprika
- 1 cup low-sodium grass-fed beef broth
- 1/4 cup water
- 1 cup cooked brown rice
- 1 head small white cabbage cored and chopped
- extra salt and pepper to taste
- 1 T. Italian seasoning
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
Directions

Heat a large pot over medium heat. Add olive oil.

Add ground beef and salt. Cook for about 5 minutes until browned, breaking up the meat into small pieces as it cooks.

Add onion, carrots, garlic, 1 Tablespoon of oregano and pepper. Stir. Cook 10 minutes.

Add tomato sauce, water, paprika and broth. Stir. Bring to a simmer. Cover and cook on medium-low for 25 minutes.

Add the cooked rice and cabbage and cook an additional 10 minutes or until cabbage is tender.

Add 1 Tablespoon of oregano, 1 Tablespoon of Italian seasoning , garlic powder, onion powder and more salt to taste. Add more broth if the mixture looks like it's too dry (it should be a little bit saucy). Let cook for 5 minutes more.
