Your New Daily Breakfast Go-To: Healthy, Grain-Free “Pancakes”!

Pancakes may be a weekend treat in your house or one that you try to avoid as their fluffy texture is often made from white flour which you fry in butter and top with syrup.  Not really an ideal way to start the day unless you want to be planted on the couch in a coma by noon.

But these pancakes are not only simple enough to whip up on a weekday morning, they are healthy, protein-packed and grain-free!  Shout out to my friends at Estreet Denim in Highland Park for the recipe!

And to keep them healthy, be sure to top them with fresh fruit and maybe a dollop of yogurt or creamy kefir instead of sugar-laden syrup!

Delicious Grain-Free Pancakes

Quick and healthy for an everyday breakfast!

Ingredients

  • 2 eggs whisked
  • 1 banana
  • 2 tablespoons all-natural almond butter
  • 1/2 teaspoon cinnamon

Directions

  1. Mash banana well with a fork or your hands and place in a bowl.  

  2. Add whisked eggs, almond butter and cinnamon to the bowl.

  3. Whisk or stir well until fully blended.  

  4. Heat a skillet on the stovetop.  Spray the heated pan with non-stick cooking spray or add butter if you prefer.

  5. Drop about 1/4 cup of the batter in sections in the pan to make pancakes.  Let cook for about 2-3 minutes until brown on bottom.  Then flip and cook about 1 minute more.  Remove from pan and place on plate.  Repeat until batter is gone.  

  6. Top with fresh fruit and yogurt, kefir, jam or a little maple syrup.
