Chocolate Chocolate Chip Muffins

These healthy little gems with a hidden vegetable inside taste like chocolate cake!  They are a great little snack or dessert for when your chocolate cravings start to creep up.

Chocolate Chocolate Chip Muffins

Ingredients

Dry Ingredients

  • 1 1/2 cups whole wheat pastry flour I use Bob's Red Mill brand
  • 1/4 cup coconut sugar
  • 1/4 cup sugar
  • 1/2 cup cocoa powder
  • 1 tsp. baking soda
  • 1/8 tsp. salt
  • 1/2 cup chocolate chips + some extra for topping

Wet Ingredients

  • 1 cup mashed banana
  • 2 large eggs whisked
  • 1/4 cup maple syrup
  • 1/4 cup almond or peanut butter
  • 1 small zucchini shredded
  • 1 tsp. vanilla extract
  • 3/4 cup unsweetened plain almond milk
  • 2 tbsp. melted coconut oil

Directions

  1. Preheat oven to 350 degrees. Spray a 12-cup muffin tin with cooking spray.

  2. Place all dry ingredients into a mixing bowl and stir together until combined.

  3. In another large bowl, combine all wet ingredients. Whisk together until nicely blended.

  4. Add dry ingredients to wet ingredients and stir everything together until combined.

  5. FiIll each muffin cup about 3/4 of the way full. Sprinkle a few chocolate chips on top of each muffin cup.

  6. Bake in oven for about 25-35 minutes until knife inserted in center comes out clean. Try not to overcook! Remove from oven and let cool for 10 minutes before removing muffins from pan.
